National Homemade Soup Day is observed annually on February 4th.  What’s more comforting than a bowl of soup on a cold day? It is the perfect comfort food; there’s nothing like a bowl of fresh homemade soup.  Every year, Americans consume over 10 billion bowls of soup! Nearly all households have soup in them, proving its immense popularity.

The history of soup is likely as old as the history of cooking itself.  Such a simple concept – combining various nutritious ingredients into a large pot to create a filling, easy to serve food – has been used for centuries.  Before the era of modern transportation, soup was a product of regionally available foods. For this reason, there are thousands of soup recipes which have evolved according to local ingredients and tastes. Italian minestrone, French onion, New England chowder, and Russian borscht are all perfect examples.

Many soups have medicinal purposes. What was once considered a wives’ tale, chicken soup now has the backing of the scientific community with helping relieve the symptoms of the common cold. Scientists believe that a bowl of the soup may reduce inflammation of the lungs. It is thought that chicken soup slows down the activity of white blood cells that can cause the inflammation.
